True Wilderness was born out of a love of high-quality meat and traditional craftsmanship. To this day, CEO Rico Schlegel is the only German butcher to specialize exclusively in the processing of premium German meat. With the self-created brands North Beef, Nordish Veal, Nordish Heifer and Nordish Pork, he has added his own touch to the products he refines.

LOVE OF HOME AS A QUALITY STANDARD
When refining the meat, the company only uses animals that were born, fattened and slaughtered in northern Germany. Only meat of the highest quality is processed at True Wilderness and enters their maturing chambers. Each piece of meat is intensively checked in advance for quality criteria such as freshness, marbling, structure and color.
THE MATURING PROCESS
The premium meat from the selected cows, calves and pigs is matured for several weeks in specially designed maturing rooms. The meat is hung dry on the bone in refrigerated and specially ventilated maturing chambers. Under constant control of humidity, temperature and air circulation, the meat matures completely naturally and develops its unique, intensely nutty flavor.
